A classic Fokiano, typical demonstration of the land of the ancient Pramnian wine, with bright red color, fine scents of flowers and red fruit, smooth tannins and a rich, well-balanced taste. It is produced from vines cultivated on terraces with a small yield per acre  500kg/acre) and it is susceptible to aging of at least five years  with surprising results.

SCENTS – COLOR – FOOD - WINE PARING

  • Color: Clear ruby color with orange highlights.
  • Nose: Scents of red forest fruits and nuts with a prevalence of cherry and walnut.
  • Mouth: Rich, warm, strong and peppery, with a leading feel of blackberry and sour cherry.
  • Aftertaste: Thick, long-lasting aftertaste with notes of dried herbs.
  • Food and wine pairing: Icarus red can be paired with yellow cheeses and meat roasted or cooked in light sauces. It is served at 16-18°C.

 

CHARACTERISTICS – VINIFICATION - AGING

  • Wine: Dry Red
  • Varietal composition: Fokiano 100%.
  • Protected Geographical Indication (PGI): Ikaria
  • Region/Vine domain: Ikaria/Rahes
  • Vinification: Destemming, pre-fermentative cryoextraction followed by typical red vinification in controlled conditions at a temperature lower than 12º while applying the method of pissage (full immersion of the pomace) 4 times a day for 30 minutes.
  • Aging: Icarus red is susceptible to aging of at least 5 years with surprisingly pleasant results.
